Stretch and fold sourdough: how many sets, and when to stop
Stretch and fold sourdough in four sets, spaced 30 minutes apart, across the first two hours of bulk fermentation. Each set builds the gluten strength a stiffer dough would get from kneading. Stop early if the dough already holds a dome and resists the stretch.
What a fold actually does to the dough
Grab the far edge of the dough with a wet hand, lift it until it starts to resist, and fold it back over itself. Turn the bowl a quarter turn and repeat three more times. Those four pulls are one set.
Three things happen at once. Stretching pulls tangled gluten strands into rough alignment and encourages new cross-links between them — the same result kneading gets by working the dough continuously. Folding also redistributes carbon dioxide: large bubbles break into smaller ones, and yeast sitting in a pocket of its own waste gets moved next to fresh flour and water. And because a bulk container develops a warm middle and cooler edges, turning the mass over evens out the dough temperature, which matters when you're timing bulk closely.
At 70% hydration or above, kneading on a counter is miserable — the dough sticks to everything and tears. Folding at intervals gets the same structure with a fraction of the mess, and the gluten relaxes between sets instead of fighting you.
The standard stretch and fold sourdough schedule
Most home recipes settle on the same rhythm:
- Mix flour and water, rest 30–60 minutes. This is the sourdough autolyse — the flour hydrates fully and enzymes start breaking down starch and protein before anything else goes in. (Adding starter at this stage technically makes it a fermentolyse; plenty of bakers do it and call it autolyse anyway.)
- Add starter and salt, mix until incorporated. Start the bulk clock.
- Set 1 at 30 minutes. Set 2 at 60. Set 3 at 90. Set 4 at 120.
- Leave the dough alone for the rest of bulk.
Stacking the sets early matters because gluten development should finish while there's still fermentation left to inflate the structure you built. If the last fold lands 30 minutes before shaping, the dough never relaxes and rises into that strength. How many stretch and folds sourdough needs
Four sets is a default, not a rule. The real answer depends on flour strength, hydration, and dough temperature.
- Strong bread flour, 70% hydration, 76°F — three sets is often enough. The dough comes together fast.
- All-purpose flour, or a high percentage of whole wheat — five or six gentler sets. Bran cuts gluten strands as they form, so whole grain doughs need more coaxing and never reach the same extensibility.
- Cold kitchen, slow bulk — spread sets over a longer window, 45 minutes apart, because fermentation is running slower underneath them.
- Warm kitchen, fast bulk — compress everything. Three sets inside the first 75 minutes, then hands off.
Judge by the dough, not the count.

Switching to coil folds
Somewhere around 75% hydration, a straight stretch and fold starts working against you. The dough is slack enough that lifting an edge tears it rather than stretching it, and tearing undoes the alignment you're building.
A coil fold sourdough handles differently. With wet hands, slide both hands under the middle of the dough, lift the whole mass until the bottom edge releases from the container, and let the ends fold under themselves as you set it down. Rotate the tub 90 degrees and repeat. Nothing gets pulled hard, very little gas is knocked out, and the dough builds tension under its own weight.
The switch isn't a hard line at one number. Strong flours take stretch and folds happily at 78%; weak ones want coil folds by 72%. To be precise about where your dough sits, working out hydration in baker's percentage takes two minutes.
When lamination earns its place
Sourdough lamination means stretching the whole dough out on a wet counter until it's a thin, translucent rectangle, then folding it back into a package. It does in one move roughly what two or three fold sets would, and it's the cleanest way to spread inclusions — olives, cheese, seeds, dried fruit — evenly through the crumb instead of in clumps.
It works best in place of the second set, around 45–60 minutes into bulk. Earlier and the dough tears; later and you're knocking out gas fermentation just made. It's optional, and plenty of excellent loaves never see it.
The cues that mean stop folding
Stop early rather than finish the schedule when you see these:
- The dough domes. It holds a rounded top within a minute of the fold instead of spreading flat.
- It pulls away from the sides. Slack dough clings to the container; strong dough releases cleanly.
- It resists the stretch. Lift an edge and it fights back after a few inches — the gluten is set.
- It jiggles as one mass. Airy and cohesive, not soupy.
- It passes the sourdough windowpane test. Pinch off a walnut-sized piece and stretch it between your fingers. If it thins enough to see light through without tearing, the network is developed. High-bran doughs may never windowpane cleanly, so don't chase it there.
Over-folding is a real failure mode. Too much strength gives a tight, even crumb rather than an open one, and folds late in bulk degas a dough with no time left to replace what you pushed out. Surface tearing during a fold means you're past the useful point. If a finished loaf reads dense and gummy, the cause is more often fermentation than folding — the overproofed and underproofed comparison separates the two.
Folding is not the bench rest
These get confused. Fold sets happen during bulk. The sourdough bench rest happens after it — divide, preshape into loose rounds, then let them sit 20–30 minutes so the gluten relaxes enough to shape tightly without tearing. It's a recovery period, not a strengthening one, and folding after preshape defeats the purpose.

How many stretch and folds does sourdough need?

What happens if I skip stretch and folds entirely?
The loaf still bakes, but it spreads more and rises less. Without folds, a wet dough never develops enough gluten alignment to hold its shape, so you get a flatter loaf and a tighter, denser crumb.
Can you do too many stretch and folds?
Yes. Excess strength tightens the crumb, and folding late in bulk knocks out gas the dough won't get back. Surface tearing during a fold is the sign you've gone past useful.
Should I stretch and fold or coil fold?
