Sourdough scoring: how to cut for a real ear
Sourdough scoring is a control mechanism, not decoration. One decisive cut held at roughly 30–45 degrees to the surface, about a quarter inch deep, tells the loaf where to blow out — and peels up the flap of crust bakers call an ear. Cut shallow and straight down instead, and you get neither.
What scoring actually controls
For the first 10 to 15 minutes in the oven, a loaf is inflating. Trapped carbon dioxide expands, water flashes to steam, and the yeast makes one last push before it dies off around 140°F. That pressure has to escape somewhere, and it leaves through the weakest point in the skin.
If you don't pick that point, the dough picks it for you — usually the shaping seam underneath, or a thin spot on the flank. That's why barely-scored loaves split sideways and come out looking like they rolled over. A proper score is a deliberate weak point that outcompetes every accidental one. So the real answer to how to score sourdough bread is that you're not drawing on it, you're aiming it.
Blade angle decides whether you get an ear
A sourdough ear is a flap of lifted crust, not a ridge that grows out of nothing. Hold the blade nearly flat to the loaf — around 30 to 45 degrees off the surface — and you're undercutting a shallow wedge of skin rather than cutting a trench. As the loaf expands, that wedge is pushed up and back, dries in the heat, and sets as a raised lip.
A perpendicular blade does something different. It opens into a symmetrical canyon that spreads evenly in both directions — the right cut for decorative work and for an even bloom on a boule, but no amount of oven spring will lift an ear out of it.
Preferences vary. Some bakers work closer to 20 degrees for a dramatic overhang; slack, high-hydration dough makes a very low angle hard to hold without dragging. Start at 45 degrees, and if the flap tears rather than lifts, go flatter next bake.
Cut depth: about a quarter inch
A quarter inch (roughly 6 mm) is the working depth for an expansion cut on a standard batard or boule.
Shallower than that — a scratch, or an eighth of an inch on a wet dough — and the cut can seal shut under steam before the loaf has finished rising. The score heals, the pressure hunts for another exit, and the loaf blows out at the base.
Much deeper and you cut through the tensioned skin into the crumb structure. The dough releases sideways instead of climbing, trading height for a flat, wide loaf. Whole grain doughs want the shallow end of the range, since their skin is less elastic to begin with.
Cold, taut dough is not optional
The third variable gets skipped most often. Score straight out of the fridge, at roughly 35–40°F, while the surface is firm and dry. Cold dough parts cleanly. Room-temperature dough is sticky and slack, so the blade drags, the skin tears rather than slices, and the ragged edge fuses shut in the oven.
Shaping tension matters as much as temperature. A tightly shaped loaf has a drum-like skin that snaps open; a loose one squashes. And no blade technique rescues over-fermented dough — once the gluten is degraded, the cut spreads flat and the ear never lifts. If your scores keep collapsing, the problem is usually upstream in the overproofed or underproofed diagnosis, not in your hands.

Sourdough scoring patterns and what each one does
Every pattern is a decision about where the loaf is allowed to grow. More cuts means the expansion gets divided, so one loaf can't have four dramatic ears — the gas splits between the openings.

Round loaves handle multiple cuts better than long ones, because the expansion has more surface to spread across. On a batard, a second full-length cut beside the first usually buys you two mediocre openings instead of one good one.
Structural cuts versus decorative scoring designs
This split is what makes sourdough scoring designs survive the oven instead of vanishing in it. Expansion cuts are deep and angled. Decorative cuts — leaves, stalks, geometric fills — should be shallow, an eighth of an inch or less, made with a straight blade held closer to vertical. They open just enough to show contrast; they don't relieve pressure.
Two habits help. Dust the loaf with rice flour first: it doesn't hydrate into paste the way wheat flour does, so it stays put and makes every cut read as a clean white line. And do the shallow artwork first, finish with the deep expansion cut, then load the loaf immediately — every minute on the counter warms the surface and softens the lines.
If a decorative loaf still bursts at the side, the design took all the attention and there was no real expansion cut. Every artistic loaf needs one working cut somewhere, even if it hides along the base of the design.
How to score bread without a lame
A lame is a razor blade on a handle, and the handle is the replaceable part. What you need is a blade thin enough to pass through dough without pushing it apart.
- Razor blade on a skewer. A double-edged blade threaded onto a bamboo skewer bows slightly, which gives you the curved profile that undercuts an ear. A single-edge blade taped to a wooden coffee stirrer works for straight cuts.
- Box cutter blade. Thin and stiff. Good for decorative work, harder to hold at a low angle.
- Paring knife. Usable but compromised — even a sharp one is thick behind the edge, so it wedges the dough apart, and low-angle cuts drag.
- Kitchen scissors. For épi-style snips, held at about 45 degrees and cut two-thirds through, scissors are the correct tool rather than a substitute.
Serrated bread knives tear. If the blade sticks, dip it in water between cuts or wipe it with a little neutral oil.
Why the ear disappears during the bake
Steam is the last piece. A cut can only open while the crust is still soft, so the first 20 minutes need a humid environment — a covered Dutch oven, or a steam setup in an oven preheated to 450–500°F. Bake dry and the surface sets within minutes, sealing the score before the loaf has finished rising, however well you cut it. That's why bake temperature and timing belong in the same conversation as scoring.
FAQ
How deep should you score sourdough?
About a quarter inch, or 6 mm, for the main expansion cut. Shallow decorative cuts run an eighth of an inch or less. Go deeper than a quarter inch and the loaf tends to spread outward rather than rise.
Why doesn't my sourdough have an ear?
Most often the blade was too upright, the cut too shallow, or the dough too warm and slack. Over-fermented dough won't hold an ear at all, and a bake without steam sets the crust before the flap can lift. Change one variable at a time.
Can you score sourdough at room temperature?
You can, but it's harder. Warm dough sticks to the blade and tears, and the score is likelier to close. If you don't retard overnight, chill the shaped loaf in the freezer for 20 to 30 minutes before scoring to firm up the surface.
Do you score sourdough before or after proofing?
After. Score at the last moment, once the final proof is done and the oven is fully preheated, then load the loaf right away. Scoring early lets the cut relax and close before it ever sees heat.
