How to store sourdough starter depends on how often you bake. Room temperature means feeding every 12 to 24 hours; the fridge drops that to one feed a week and tolerates three to four weeks of neglect. Drying and freezing cover the longer breaks.

"Safe unattended" is the point past which recovery gets unpredictable, not a death clock. Neglected fridge starters often come back after two months, just with more feeds and a worse smell.
Counter storage works only if you bake constantly
At 70°F a 100% hydration starter burns through its flour in roughly 8 to 12 hours, peaks, then falls. Leave it a full day and it sits in its own acid and alcohol, which knocks back the yeast faster than the bacteria — that's why a neglected counter starter turns sour and sluggish at the same time. Feed once a day at minimum, twice in a warm kitchen.
Raising the ratio buys time. A 1:1:1 feed peaks fast; a 1:5:5 feed gives the culture five times the food and can stretch to 12–16 hours at room temperature — a better lever than chasing the thermostat when your schedule shifts. Feeding ratios get their own breakdown.
How to store sourdough starter in the fridge
Feed it first. A starter chilled on an empty stomach acidifies immediately and has nothing left for the week ahead.
Two approaches, both fine:
- Chill straight after feeding. Maximum food reserve, slowest acidification. Best for long gaps.
- Let it rise an hour or two, then chill. Active when the cold hits, so it keeps working a while longer. Slightly more sour, slightly faster to wake.
A few things that extend fridge life:
- Go stiffer. A 50–60% hydration starter acidifies noticeably slower than a 100% one — the traditional storage form, for a reason.
- Keep the jar small. 40–60 g is plenty to build from and cuts your discard.
- Don't seal it airtight. Fermentation makes CO₂, and a clamped gasket jar builds pressure. Rest the lid on top or screw it on loosely.
- Cold means cold. The door shelf swings warm every time you open it — put the jar at the back.
Hooch is hunger, not death
That dark liquid on top is alcohol, and it means the culture ran out of food. Pour it off for a milder starter, or stir it back in if you want more sourness. Gray, brown, or clear liquid is all normal.
What isn't normal: pink or orange streaks, fuzzy growth of any color, or a solvent smell that doesn't clear after two feeds. Streaks and fuzz mean the whole jar goes in the bin — you can't scrape mold off a liquid culture.
How to feed sourdough starter from the fridge
This is the step most people shortcut. A cold starter is dormant, not ready — one feed rarely makes it strong enough to lift a loaf.
The two-feed rule: give a fridge starter two consecutive room-temperature feeds before you build a levain.
- Leave the jar on the counter about an hour to come up to room temperature.
- Discard down to 20–30 g, feed 1:1:1 or 1:2:2, and let it go 8–12 hours.
- Feed again at the same ratio. This one should peak in 4–8 hours at 75°F.
The second feed is the diagnostic. If it doubles and peaks on a predictable clock, the yeast have recovered; if it takes 14 hours and barely domes, feed it a third time. A float test confirms you've caught the peak, but it's a snapshot — the rise curve tells you more.

How to dry sourdough starter
Drying is the best backup available: flakes keep for years at room temperature and survive a dead freezer.
Use a ripe starter — at peak or just past it, when the population is highest. Then:
- Spread it paper-thin on parchment. Thin matters more than anything else here — thick patches stay damp in the middle and mold before they dry.
- Leave it at room temperature 12 to 48 hours depending on humidity. It's done when it snaps instead of bending.
- Peel it off and crumble it into flakes.
- Store the flakes airtight somewhere cool and dark, labeled with the date and hydration.
Don't speed this up with heat. Yeast die well below boiling, and an oven with the light on can drift past the point of no return. If you use a dehydrator, keep it under 95°F (35°C).
Dry a backup while the starter is healthy. One made from a struggling culture reproduces the struggle.
How to rehydrate sourdough starter
Rehydrating is slow on purpose. You're waking a small surviving population, not feeding a full one.
- Crush about 10 g of flakes and cover with 20 g of warm water, around 85°F (29°C). Let it sit 2–4 hours until it's a smooth slurry.
- Stir in 20 g of flour. Leave it 12–24 hours.
- From there, feed 1:1:1 every 12 hours at room temperature.
Expect days one and two to look dead or smell solvent-like — that's the bacteria running ahead of the yeast, and it sorts itself out. Bubbles usually show by day three or four, a predictable rise by day five to seven. Don't bake until it doubles on schedule twice in a row.
If a full week of feeding produces nothing, the flakes were dried too thick or too warm, and you're better off starting fresh than nursing them.
Can you freeze sourdough starter?
Yes, though it works better as a second-string backup than a primary one. Ice crystals rupture cells, so a share of the culture doesn't survive. What's left works — there's just less of it, so recovery runs slower and less predictably than from flakes.
To freeze: portion 30–50 g of ripe starter into a small bag pressed flat, double-bag, and label. A thin slab freezes and thaws quickly, which limits crystal damage.
To wake it: thaw overnight in the fridge, bring it to room temperature, then feed every 12 hours. Give it a week before judging — frozen starters commonly need five to ten feeds to hit a reliable rise.
Plan on months rather than years, and keep it clear of a frost-free freezer's defrost cycle — repeated partial thawing is harder on a culture than steady cold.

How long can sourdough starter go without feeding in the fridge?
Three to four weeks with no real trouble. Past that it builds up hooch and acid, and recovery takes more feeds — but starters left two or three months often revive fine. Discard down to a small amount and feed daily until it peaks predictably.
Do I need to discard before every fridge feed?
Discarding is the simplest way to keep it healthy and keeps the jar from growing. You can skip it by feeding much larger amounts each time, but for once-a-week storage, 20–30 g and a matching feed is far less flour.
Can I bake with starter straight out of the fridge?
You can, but the loaf will be slow and often dense. Cold starter's yeast are depressed relative to its bacteria, so it makes acid faster than gas. Two room-temperature feeds first is the reliable path.
